On September 18, 2024, the Office of Childhood (OOC)received a complaint alleging children are fed but they do not always have protein. Compliance Inspector (CI) Heather Radney conducted an investigation of the allegation and found it to be substantiated based on the following evidence:
5 CSR 25-500.202(1)(G) - The acceptable food components and serving sizes for meals and snacks are outlined in the following chart for each age group. Menus and amounts served shall be based on this chart.
On September 25, 2024, CI Radney conducted an unannounced inspection of the facility. Macaroni and cheese made with powdered cheese was served for lunch, with a vegetable and a fruit, and milk. There was no protein being served with lunch.
On September 25, 2024, Compliance Inspector (CI) Heather Radney conducted interviews with Rachel Koperski, Shalla Mitchell, Victoria Long, Robyn Schad and Hanna Shockley. Caregivers reported they serve protein most days for lunch, but did not serve a protein today. Shalla Mitchell stated she is the cook, and she follows the menu. There was no protein on the menu for lunch today so she didn't prepare a protein. Victoria Long reported she creates the menu and follows the public school menu. Shalla cooks what is listed on the menu. She did not realize a protein was required every day for lunch.
